Grown at 1600 MASL in the highlands of Caldono, Cauca, this washed Colombian coffee is the work of producer Paola Trujillo at Finca Patio Bonito.
Hand-picked at peak ripeness, the cherries are floated and sorted for quality, then undergo a 30-hour underwater fermentation before being pulped. The beans are gently washed and dried under controlled temperatures to lock in their vibrant, layered profile.
Expect a clean, juicy cup with notes of apricot, mandarin, cacao nib, and sugar cane.
