Handpicked at peak ripeness, the cherries are floated to remove defects before undergoing a 30-hour underwater fermentation. After pulping, the beans are gently washed and slowly dried under temperature-controlled conditions, preserving their clarity and complexity.

The result is a lively, fruit-forward cup with notes of blackberry, cherry, and lime - a juicy and refreshing brew with crisp acidity that shines through, perfect for filter brewing.
